I’m working on a cheatsheet for Unicode (Ctrl+Shift+u) for Linux.
In the local editor this looks fine:
In the online editor (collabora) I see:
is this a problem with Coolwsd / collabora or OnlyOffice?

I now understand this is a collabora issue. OnlyOffice simply opens a web browser component that is used by the Collabora app to display the editor.
Am I right in the assumption?

I am not quite following your assumption. Collabora develops their own processor, thus there is no correlation between them. If by “issue” you mean question mark sign on the second screenshot, then it seems to be related to Collabora and you should contact them with the file.
