Change default settings for KCEditor used to compose emails

When creating a new email using the web-based email module, the editor defaults to Open Sans 12pt font. This is too small so I want to make the font 16pt by default.

I am assuming there is an API but I don’t know how to change/create or locate where to add/change the settings. I am self-hosting with Docker.

Unfortunately, the editor in Mail module runs as a service, there are no such settings.
